Hogs Pudding

Yields1 Serving
 1 lb Jimmy Dean Pork Sausage (scrambled)
 1 cup White Rice
 1 tbsp Oatmeal
 Eggs (1 or two per person)

Scramble pork Sausage
Drain as much grease as you can

Prepare rice. (rice doesn't take long so scamble pork first)
Right before you mix the pork with the the rice add the Oatmeal to pork to soak up any remaining grease. (keeps your rice from getting grease stained)

Poach Eggs
Fried eggs (over easy) also work as seen from the picture. Essentially you want some type of goopy eggs so you can chop them up and mix them with the mixture.

Lay cooked eggs over the mixture in the pan
Serve from Pan

Serve with Toast

Nice side: Stewed tomatoes & onions (warmed separatly) then added per individuals taste after they have plated their portion. This doesn't go over the whole thing.
